Established in Meiji 23 (1890) in Arako, the birthplace of Maeda Toshiie, the feudal lord of Kaga Hyakumangoku. Our "ikishimen" noodles, delivered directly from our main factory, are crafted using carefully selected domestically grown wheat and salt, with a dedication to adjusting the blend based on the seasons. Recreating the authentic taste of Nagoya's handcrafted noodles, our noodles are delightfully chewy with a firm texture. We carry on the tradition of regional flavors in our broth, crafting it in-house from the initial shaving of the broth. We also offer kishimen noodles as souvenirs, available for purchase in-store.
