Founded in 1925. Yamamotoya Sohonke, known for nikomi udon noodles 

Our secret blend, made with Kakukyu hatcho miso from Okazaki in Aichi Prefecture, gives our dish its aroma and depth of flavor. Our udon noodles are made with Japanese flour, which gives them a firm texture.

Chicken-and-egg nikomi udon

Uses Nagoya Cochin chicken.
It makes a perfect match with the egg.
